Creative Uses For Leftover Lamb!
Did you cook a leg of lamb and have tons leftover? Check out these clever ways to reinterpret your leftover lamb and turn it into a new, fantastic meal.
Shepherds Pie
While this recipe is traditionally made with ground lamb, you can always use the leftover leg of lamb or lamb chops. Slice the meat small and thin and set to the side. Saute carrots, onions and celery in butter or olive oil until soft. Sprinkle with several spoonfuls of flour and cook for about a minute, allowing the flour to dry the pan. Slowly add some chicken stock and watch as the sauce thickens. You could start with about a cup and add more as needed. Add the lamb, top with mashed potatoes, and dot with butter. Place the dish in the oven for about 30-45 minutes.
Gyros
This is a fantastic lunch that you can pack up easily by wrapping in tin foil or placing it in a reusable plastic container. Slice the meat thin and place in a pita with feta, red onion, chopped lettuce and tomato. You can keep it easy by drizzling some Italian or Greek salad dressing, or you can make tzatziki with yogurt, garlic and cucumber.
